日餐里的Appetizer(即前菜)分为Cold Appetizer 和Hot Appetizer.这里介绍几种比较常见的前菜。
Hot Appetizer
常见的热菜有:
Edamame(毛豆)
Boiled soy beans with sea salt.
豆荚呈绿色带有茸毛,日本又名:枝豆。煮熟后,撒上盐巴,即成。
Gyoza(日式煎饺)
Pan-fried pork dumplings.
一般分为菜饺(vegetable gyoza)与肉饺,一般猪肉饺较多,也有猪肉与鸡肉混合的,佐以gyoza sauce。
Agedashi tofu(日式烧豆腐)
Lightly-fried tufu served in tempura sauce with grated daikon and topped with bonito flakes.
是一种日式豆腐的热菜做法,切成方形状,裹上甜不辣粉,油炸至金黄色, 然后撒上seaweed和dried bonito flakes,后佐以放了萝卜泥,或者姜泥的tembura sauce.
Tempura(甜不辣)
Your choice of meat or vegetable delicately fried in batter,served with tempura sauce.
甜不辣在北美日餐里面比较多的是:chicken ,shrimp,vegetable,佐以放入姜泥或者萝卜泥的tempura sauce。
Ika yaki
Sliced squid,grilled it and glazed with teriyaki sauce.
烤制的鱿鱼,切成片,淋上teriyaki sauce.
Shumai(烧卖)
Shumai is a small steamed or fried dumpling filled with shrimp.
外观圆圆的,白色的,里面有虾,配以gyoza sauce。
Yakitory(日式烤鸡肉串)
A Japanese type of skewered chicken with peper.
一般是鸡块鸡肉与青椒等蔬菜串到一块,上烤架,烤熟后,淋上teriyaki sauce.
Hurumaki(日式春卷)
Japanese spring roll consisting of shredded vegetables.
一般是素的,比普通春卷略小,经过油炸呈金黄色,然后佐以sweet chill sauce.
Beed kushiyaki(日式烤牛肉串)
A japanese type of skewered beef with peper.
牛肉串上洋葱和青椒,做法与yakitory相同。
Miso nasu
Eggplant sliced in half,grilled and brushed with a sweet, savory miso glaze.
茄子对半切好,放入油锅,稍炸片刻捞起,淋上miso sauce。
Tatsuta age
Japanese deep-fried marinated chicken with katsu sauce on the side.
裹上土豆淀粉的鸡肉薄片,在油锅里炸过,佐以katsu sauce。
Beef negimaki
Broiled strips of beef rolled with scallions
薄牛肉片加入葱条,卷成春卷状,切片,放入烤架,烤制完毕,淋上teriyaki sauce。
Soft shell crab
Deep-fried soft shell crab in batter,served with tempura sauce.
软壳蟹,入锅油炸后,配以加入姜泥或者萝卜泥的tempura sauce。
Hamachi kama
Broiled yellowtail collar,the juiciest part of fish,served with ponzu sauce.

小知识
对于刚接触日餐的人来说,有时比较没头绪的,前菜当中哪些菜是需要跟sauce的,哪些菜是不需要跟的,当然这也是一个徐徐渐进的过程,建议先从认识前菜开始,然后懂得如何去介绍这一道菜。需要说明的一点是,edamame一般是需要另跟一个碗或小篮子的,方便客人放豆壳。
